Baked Feta with Cantaloupe & Sasya Spicy Cilantro Salsa

  • 2 cups cantaloupe, cut into 3/4″ cubes
  • 3 tsp olive oil, divided
  • 2 tsp maple syrup
  • Pinch of salt
  • Pinch of pepper
  • 1 block feta, 6-10 oz. 
  • 2 tbsp Sasya Spicy Cilantro Salsa
  • Optional: fresh herbs for garnish
  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Grease a small baking dish (6” x 6” or roughly equivalent) with one teaspoon of olive oil.
  3. Spread the cantaloupe cubes in a single layer along the bottom of the dish.
  4. Add remaining olive oil, maple syrup, salt, and pepper to the cantaloupe and toss to coat.
  5. Roast the cantaloupe mixture in the oven for about 10-15 minutes.
  6. Remove the cantaloupe mixture from the oven. Use a spoon to carefully drain off accumulated water.
  7. Place the block of feta in the cantaloupe mixture. Drizzle the feta with the cilantro salsa.
  8. Bake for 10-15 minutes. For a crisp, golden-brown result, broil for two-three minutes to finish.
  9. Remove the dish from the oven, garnish with plenty of black pepper and fresh herbs as desired, and serve.
