Chili-Lime Scallops with Couscous and Cilantro Salsa

  • 1 box Whole Foods Organic Pearl Couscous
  • 10 medium sized scallops
  • 2-3 cups of baby spinach
  • 1 lime
  • Tbsp. butter
  • Tbsp. olive oil
  • Spices: Chili, salt, black pepper

*Serves 2 people. 

  1. Cook couscous as directed on package, adding olive oil and spices halfway through.
  2. Pat scallops dry and sprinkle each side with spices.
  3. Using a hot pan, melt butter in pan and cook scallops for about 3 min on each side.
  4. While couscous is warm, stir in spinach to wilt.
  5. Separate couscous into two bowls and top each with 5 scallops.
  6. Squeeze juice of 1/2 lime on each, and drizzle Sasya Spicy Cilantro Salsa on top.
