Chili-Lime Scallops with Couscous and Cilantro Salsa

INGREDIENTS
STEPS
1 box Whole Foods Organic Pearl Couscous
10 medium sized scallops
2-3 cups of baby spinach
1 lime
Tbsp. butter
Tbsp. olive oil
Spices: Chili, salt, black pepper
*Serves 2 people.
Cook couscous as directed on package, adding olive oil and spices halfway through.
Pat scallops dry and sprinkle each side with spices.
Using a hot pan, melt butter in pan and cook scallops for about 3 min on each side.
While couscous is warm, stir in spinach to wilt.
Separate couscous into two bowls and top each with 5 scallops.
Squeeze juice of 1/2 lime on each, and drizzle Sasya Spicy Cilantro Salsa on top.
