PAN-ROASTED SWORDFISH

Swordfish are fast-swimming open-ocean predators with mild but steaky white flesh that is a brilliant companion for our tangy, flavorful cilantro spread. A sustainability success story, North Atlantic swordfish bounced back from overfishing in the 1990s, so this simple recipe will serve you for years to come.

Sword Fish-Sasya Cilantro

  • 1 tbsp olive oil
  • 2 tbsp Sasya Cilantro Dip
  • salt for taste
  • 1-inch thick swordfish steak
  • Preheat oven to 400 F
  • Meanwhile, heat oil in an oven-proof pan such as a cast iron skillet over medium-high heat. Sprinkle each side of your swordfish steak with salt, then place the fish in the pan.
  • Cook until the bottom is browned and no longer sticking to the pan, anywhere from 3 to 10 minutes.
    Turn the fish, then transfer the pan into the oven. Roast until the fish is just cooked through, about 10 minutes, or 145* with a meat thermometer.
  • Alternatively, test for doneness by inserting a knife into the middle. Fully cooked swordfish is opaque white, not translucent.
