Personal Tortilla Pizza with Spicy Eggplant Salsa

  • Small whole wheat tortillas
  • Sasya Spicy Eggplant Salsa
  • Organic baby spinach
  • Organic grape tomatoes
  • Sliced portobello mushrooms
  • Feta cheese
  • Trader Joe’s Beef-Less Ground Beef
  • Sriracha sauce
  1. Spread 2-3 spoonfuls of Sasya Spicy Eggplant salsa per tortilla.
  2. Coat in a layer of baby spinach.
  3. Sprinkle feta cheese and vegan ground beef on top.
  4. Cut up tomatoes and mushrooms to preferred size and scatter across tortilla.
  5. Cook for 10-15 minutes at 400 degrees until tortilla is brown on edges and toppings are fully cooked.
  6. Remove from oven and drizzle with Sriracha as desired.
