Personal Tortilla Pizza with Spicy Eggplant Salsa

Small whole wheat tortillas
Sasya Spicy Eggplant Salsa
Organic baby spinach
Organic grape tomatoes
Sliced portobello mushrooms
Feta cheese
Trader Joe’s Beef-Less Ground Beef
Sriracha sauce
Spread 2-3 spoonfuls of Sasya Spicy Eggplant salsa per tortilla.
Coat in a layer of baby spinach.
Sprinkle feta cheese and vegan ground beef on top.
Cut up tomatoes and mushrooms to preferred size and scatter across tortilla.
Cook for 10-15 minutes at 400 degrees until tortilla is brown on edges and toppings are fully cooked.
Remove from oven and drizzle with Sriracha as desired.
