Spicy Curry Chip Crusted Salmon

  1. Prepare farro as directed.
  2. Crush up chips. Lightly rub chips with mixture of spices on one side of salmon.
  3. Heat olive oil over medium heat in a cast iron pan and cook salmon about 4 min. on each side.
  4. Pair with farro dressed with olive oil, goat cheese, walnuts, more lentil chips, and your choice of veggies! This recipe uses roasted cauliflower, broccoli, cucumber, and pepper.
